The challenge
Peter's 64-seat grill house was losing dinner covers to slow service. Waiters wrote orders on paper chits, walked them to the kitchen, and the grill station often started the wrong dish. On a busy Friday the restaurant turned away roughly 20 walk-ins because tables sat uncleared while bills were manually totalled. Reconciling M-Pesa against the till happened after midnight, and the books rarely balanced on the first attempt.
What SawaPOS changed
SawaPOS replaced the chit system with table-side ordering that fires straight to a kitchen display, routed by station — grill, sides and drinks each see only their own tickets, with prep timers running. Recipe-level costing was configured for all 74 menu items, so every plate sold deducts its exact ingredients. M-Pesa STK Push and card payments now post to the sale automatically, and each shift closes with a declared-versus-system variance report.

- Average order turnaround dropped from 18 minutes to 11 minutes
- Friday covers up 22% with no extra staff hired
