The challenge
Brian's lounge was losing an estimated 6% of spirits every month. Bartenders poured freely, tabs were written on napkins and transferred verbally at shift change, and happy-hour prices depended on whoever was serving. Reconciling a Saturday night could take until Monday.
What SawaPOS changed
SawaPOS introduced tracked tabs that open, transfer between bartenders and close under a named staff PIN, so every pour is attributed. Bottle-level variance compares theoretical usage against actual stock at each shift close and flags gaps immediately. Happy-hour pricing now applies automatically by time of day rather than by judgement.
